Product Information
“Yara” (يارا) in Tunisian means “little butterfly” – light and free, yet always in harmony with everything around.
I come from Chemlali olives, harvested mid-season at the point where everything is in balance. Not too mild, not too intense — this is where fruitiness, bitterness, and spice come together.
You’ll notice a clear fruitiness, a soft bitterness, and a light peppery finish. Enough to give character, without taking over.
I’m made for everyday cooking — versatile, steady, and easy to pair with almost anything.

Our mountain-grown olives are irrigated with pure spring water, naturally rich in minerals. They are harvested by hand during daylight hours — a gentle method that helps protect birds and preserve the natural ecosystem of the olive groves.

Shortly after harvest, the olives are transported to the mill within just a few hours to preserve their freshness, aromas, and natural quality.

We work primarily with two traditional Tunisian olive varieties: Chemlali and Chetoui.
Chemlali produces smooth, mild, and harmonious oils — used for Hana, Yara, Heritage, and Classic.
Chetoui is known for more intense, robust, and polyphenol-rich profiles — used for Dalia and Polyphena.

Depending on the harvest period — from very early to late season — the olives develop different characteristics, ranging from delicate and balanced to bold, peppery, and expressive.
100% organic extra virgin olive oil obtained solely from cold-pressed Tunisian olives.
