“Dalia” (داليا) in Tunisian symbolizes strength and vitality – like an olive tree, deeply rooted and full of life.
I come from Chetoui olives, harvested early while they’re still green and full of energy. At this stage, the olives are more intense — and that’s where my
character comes from.
I’m stronger, more expressive, with noticeable bitterness and a peppery finish.You’ll feel it more, and that’s the point.
I’m here to add depth, intensity, and a bit of edge to your dishes

Our mountain-grown olives are irrigated with pure spring water, naturally rich in minerals. They are harvested by hand during daylight hours — a gentle method that helps protect birds and preserve the natural ecosystem of the olive groves.

We work primarily with two traditional Tunisian olive varieties: Chemlali and Chetoui.
Chemlali produces smooth, mild, and harmonious oils — used for Hana, Yara, Heritage, and Classic.
Chetoui is known for more intense, robust, and polyphenol-rich profiles — used for Dalia and Polyphena.

Depending on the harvest period — from very early to late season — the olives develop different characteristics, ranging from delicate and balanced to bold, peppery, and expressive.
