Hana is the mildest profile, with light fruitiness and minimal bitterness and pungency.

Polyphena is the most intense specialized profile; Dalia is the strongest culinary profile. Polyphena is intended raw, while Dalia is built to work with robust foods and grilling or roasting.

For broad everyday cooking, Yara, Classic and Heritage are the most versatile choices. Hana is better for delicate uses and very light cooking, Dalia is strong for roasting/grilling, and Polyphena is intended for raw use.

Hana works well when you want a delicate salad oil, Yara when you want more fruitiness and structure, Dalia for robust or bitter salads, and Polyphena when you want a very intense raw finish in a small amount.

Both sit in our balanced, versatile range. Classic is the timeless everyday line, while Heritage is defined by its Demeter certification and biodynamic positioning.

Polyphena is our dedicated high-polyphenol olive oil and can reach up to 1,200 mg/kg polyphenols. It is also our most bitter and peppery profile and is intended for raw use.

Yes. We deliberately harvest different profiles at different stages: early harvest creates more intensity, while later harvest can produce softer, milder flavors. This is one of the main differences between Dalia, Yara and Hana.
