“Carthage” (قرطاج Qartāj) recalls the legendary coastal metropolis where Mediterranean paths, scents, and cultures have met for millennia. A gift symbolizing vision, craftsmanship, and endurance – like seaside stone walls, kissed by salt and shaped by history. It unites three olive oil characters, from mild to intense, inviting you on a sensory journey through Tunisia’s flavor heritage.

Our mountain-grown olives are irrigated with pure spring water, naturally rich in minerals. They are harvested by hand during daylight hours — a gentle method that helps protect birds and preserve the natural ecosystem of the olive groves.

Shortly after harvest, the olives are transported to the mill within just a few hours to preserve their freshness, aromas, and natural quality.

We work primarily with two traditional Tunisian olive varieties: Chemlali and Chetoui.
Chemlali produces smooth, mild, and harmonious oils — used for Hana, Yara, Heritage, and Classic.
Chetoui is known for more intense, robust, and polyphenol-rich profiles — used for Dalia and Polyphena.

Depending on the harvest period — from very early to late season — the olives develop different characteristics, ranging from delicate and balanced to bold, peppery, and expressive.
