Delicate - "Hana"
A light, delicate olive oil with a fine fruitiness. Harvested at the end of the season, in January - when the olives are particularly mild.
"Hana" (هَناء) means happiness and well-being in Tunisian - like a quiet, sunny moment on the Mediterranean.
Medium - "Yara"
A smooth olive oil with a balanced, fruity character. Harvested in the middle of the season in December - a mixture of ripe and unripe olives.
"Yara" (يارا) is Tunisian for "little butterfly" - light and free, but always in balance with everything around it.
Robust - "Dalia"
An intense olive oil with a strong character and full of fruit. Early harvest in October and November - when the olives are still green and unripe, but contain a lot of bitter substances (polyphenols).
In Tunisian, "Dalia" (داليا) is a symbol of strength and power - like an olive tree, deeply rooted and full of life.
